GLUTEN-FREE
When we started researching gluten-free beer we couldn’t believe how simple a process it was. We add a clever little protease enzyme to each batch at the start of fermentation and then let it do its job.
How it works (the technical bit)
The key component of Brewers Clarex® is a proline-specific endo-protease that targets and breaks down the immunogenic epitopes—the specific parts of the gluten protein that trigger a negative immune response in people with celiac disease. By breaking down these critical parts of the gluten protein into smaller, non-immunogenic fragments, the enzyme renders the gluten harmless and no longer capable of interacting with the immune system in the way it would in its original form.
Why doesn’t everyone do this? Did we mention the enzyme is really expensive? And the testing too! But, we think it’s worth the cost though.

Meet OUR TEAM
Matt and Nick started running Little Brewing Co in 2020, they actually shook hands and contracts were in place when Boris said “shut all pubs”, a rather defining moment for all of us, but when you’ve just signed over most of your savings to start a business supplying beer to pubs, it certainly rang home.
It did mean that we had plenty of time to get to grips with our new kit, trial brews were many and the brewing kit was reengineered multiple times, 2 fermenter tanks bought, a bottle filling set up added, minikegs filled and driven around to deliver by hand. In our first year we sold just over 7000Ls of beer.
Roll on 5 years and we’ve moved to a brand new building, put a taproom in, added lots of new equipment and grown the team from the two of us to 7 of us in the brewery, with 7 more running the taproom.
Last year we brewed just over 165,000L, which we think is pretty alright.
Next? We’re not sure yet, but we’ve just added another 2 fermenters (that’s now 12 tanks) so one things for sure, we don’t plan on staying Little for ever.
